About Lucas Chapman
Based in Chicago, Lucas Chapman serves as regional director of food operations for Cresco Labs, which stands as one of the leading cannabis enterprises and has operations spanning multiple states. Lucas Chapman works with a dedicated Chicago team in ensuring quality and purity of products that are distributed to dispensaries across the country.
Previously holding responsibilities with Levy Restaurants as vice president of operations, Mr. Chapman guided diverse aspects of Spiaggia Complex. He managed finances, sales, marketing, and menu development for a company that encompasses Michelin-starred restaurant, cafe, catering business, and pop-up components.
Mr. Chapman has also served as director of food and beverage with Ace Hotel/Atelier Ace, where he was part of the hotel’s opening team. Working from the ground up, he created a food and beverage training program and managed the recruiting and hiring process for a dynamic project that was underpinned by design and architectural freedom.
Lucas Chapman holds a bachelor’s degree in business administration from Ohio State University. A certified sommelier, he has also completed hotel revenue management and business strategy programs at Cornell University.
